okay......so I have to admit it, Autumn is my favorite
time of year. Other people can adore summer
or even spring. But I love Autumn and Her Beauty.
when leaves start turning orange, yellow and red, when
pumkins sit happily on people's porches,
when you can go apple picking and when the air
has a cold snap to it that reminds us that winter is
coming in several months.
Autumn is such a poetic season. It is a time for pulling back
from all the summer excitement, and relishing
in contemplation and the delicacy of the days.
Whereas Summer comes at us in all it's blazing glory,
Autumn causes us to step back and reflect the change.
It is a time for families and food and the hearth of home.
For centuries people have associated Autumn with
harvest and reaping of all that was so
painstakingly sown. You've worked hard all year,
why not take a little time out to appreciate
Mother Nature's bounty too.
What a better way to bring in Autumn.....
then to fill your home with aromas of pumpkin and spices..
Here is a recipe that will do just that ......
Pumpkin Bread
3 cups sugar
1 cup of vegetable oil
4 eggs
2 1/4 cups of pumpkin
3 1/2 cups of flour
2 teaspoons baking soda
2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground nutmeg
1 teaspoon allspice
1 teaspoon ground ginger
Preheat the oven to 350 degrees. Cream sugar, oil and eggs until creamy. Add pumpkin and mix. In a separate bowl, mix all the dry ingredients together. Fold the dry ingredients into the wet ingredients and mix until moistened. Pour into greased bread pans (you could use 2 large & 1 small or all small). Bake for 50 minutes or until done for large loaves & 30 minutes or until done for small loaves.
